It is a standard Greek weekday dish, vegan, and cooked in one pot.<\/h2>\n<p class=\"wp-block-paragraph\">The point of a ladera plate is the oil. Use a good extra virgin Greek olive oil. The beans should end soft, not crisp, in a thick tomato sauce.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Serves 4\u20136<\/strong><br \/><strong>Time:<\/strong> about 1 hour<\/p>\n<p class=\"wp-block-paragraph\"><strong>Ingredients<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li>1 kg string beans, washed, ends trimmed<\/li>\n<li>8 baby potatoes, peeled and halved<\/li>\n<li>5 ripe Roma tomatoes, blended<\/li>\n<li>1 Spanish onion, finely chopped<\/li>\n<li>1 garlic clove, finely chopped<\/li>\n<li>\u2153 cup extra virgin olive oil<\/li>\n<li>2 cups water<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong>Method<\/strong><\/p>\n<ol class=\"wp-block-list\">\n<li>Warm the oil in a wide, heavy pot. Add the beans and saut\u00e9 for 2 minutes.<\/li>\n<li>Add the tomato, onion and garlic. Cook for a few minutes more.<\/li>\n<li>Add the potatoes, water, salt and pepper. Stir.<\/li>\n<li>Cover, lower the heat to medium, and cook for about 50 minutes, stirring often, until the beans are tender and the liquid has reduced to a sauce.<\/li>\n<li>Rest for 10 minutes before serving. It is better the next day, at room temperature, with bread and feta if you eat dairy.<\/li>\n<\/ol>\n<p class=\"wp-block-paragraph\"><em>Recipe adapted from Flavours and Flair.
