The result is a crispy, flavourful exterior and tender, juicy meat, typically served in thick slices with pita, tzatziki and Greek salad. Mix thoroughly so every piece is well coated.<\/li>\n<li>Cover and marinate in the refrigerator for at least 6 hours, preferably overnight (up to 24 hours).<\/li>\n<li>Thread the meat onto a large skewer or rotisserie spit, alternating with pieces of onion and pepper if desired. Leave a little space between pieces for even cooking.<\/li>\n<li>Cook slowly over charcoal or on a rotisserie, turning regularly, for 1\u00bd\u20132\u00bd hours depending on the heat and size of the pieces.
