{"id":14440,"date":"2026-04-12T03:39:50","date_gmt":"2026-04-12T03:39:50","guid":{"rendered":"https:\/\/in-greece.com\/index.php\/2026\/04\/12\/lamb-kapamas-ekathimerini-com\/"},"modified":"2026-04-12T03:39:50","modified_gmt":"2026-04-12T03:39:50","slug":"lamb-kapamas-ekathimerini-com","status":"publish","type":"post","link":"https:\/\/in-greece.com\/index.php\/2026\/04\/12\/lamb-kapamas-ekathimerini-com\/","title":{"rendered":"Lamb \u2018kapamas\u2019 | eKathimerini.com"},"content":{"rendered":"<p> <br \/>\n<\/p>\n<div itemprop=\"articleBody\">\n<p>Chef: Nena Ismyrnoglou<\/p>\n<p><strong>Prep: 30 minutes<\/strong><\/p>\n<p><strong>Cooking: 3.5 hours<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>(serves 6)<\/p>\n<p>\u2022 2.5 kg lamb (leg and shoulder), cut into portion-sized pieces, bone-in<\/p>\n<p>\u2022 1 cup flour, for dredging<\/p>\n<p>\u2022 300 g onion, finely chopped<\/p>\n<p>\u2022 200 g pearl or shallot onions, peeled<\/p>\n<p>\u2022 150 g fennel bulb, finely chopped<\/p>\n<p>\u2022 2 bay leaves<\/p>\n<p>\u2022 2 liters meat stock or water<\/p>\n<p>\u2022 1 medium head lettuce, thinly sliced<\/p>\n<p>\u2022 200 g chard, thinly sliced<\/p>\n<p>\u2022 100 g spring onions, thinly sliced<\/p>\n<p>\u2022 100 g dill, finely chopped<\/p>\n<p>\u2022 50 ml lemon juice<\/p>\n<p>\u2022 1 tsp fennel seeds, lightly crushed<\/p>\n<p>\u2022 150 ml olive oil<\/p>\n<p>\u2022 Salt, freshly ground black pepper<\/p>\n<h3>Method<\/h3>\n<p>Season the meat with salt and pepper and lightly dredge it in flour. In a wide pot, heat half of the olive oil over high heat and brown the lamb on all sides. Remove it from the pot and set aside.<\/p>\n<p>In the same pot, add the fennel seeds and toast them for 1 minute, stirring. Add the remaining olive oil, the chopped onion, the pearl or shallot onions, the fennel bulb and the bay leaves. Reduce the heat to medium and saute for 4-5 minutes, until softened.<\/p>\n<p>Return the browned lamb pieces to the pot, add the stock (or water), and season with salt and pepper. Bring the liquid to a boil, then reduce the heat to low, cover the pot, and simmer gently for about 3 hours, or until the meat is so tender that the bone slips easily away from the flesh.<\/p>\n<p>Add the lettuce, chard, spring onions, dill, and lemon juice, and season to taste with salt.
